Paínho is a smoked sausage made with thoroughly selected loin meat, seasoned in wine and garlic marinade and mixed with various seasonings.
Filled in natural pig or cow gut and dried in a traditional smokehouse, where it is used holm oak firewood. Its aspect is bright red coloured, slightly streaky, firm and the mixture is well adherent to the casing. It has a distinctive flavour and aroma.
