Cured and aged sheep cheese (reserve)
It is a cured sheep cheese, made from raw sheep’s milk. Coagulation is obtained through animal rennet.
Characteristics: It is a cured, semi-hard, unctuous, straw-yellow cheese, with tiny holes. It has a rectangular shape without defined edges. Both the smell and taste are the great responsible for enjoying this product of excellence.
It has a hard, well-formed, smooth rind with a straw–yellow colour. Its aroma and flavour are due to its long ageing.
Ingredients: Raw sheep's milk, animal rennet and salt.
